Knickerbocker

In London throughout the late 1800s, claret was a popular addition to many rum cocktails due to the wine's ubiquity in the city. In the Knickerbocker, the wine creates a beautifully layered effect in the glass and creates a perfect balance alongside the Merser's Double Barrel Rum.

Ice, stir, fruit well and strain into a chilled highball. Float claret on top.
